Healthy Mexican

I've had an odd craving for mexican food for a few days. I say odd because I never want mexican food, and it typically does not agree with my tummy. So many hydrogenated oils and fats. So what does one do? Make it home!
I sauteed some green peppers, onions, mushrooms, and aduki beans with cumin and garlic. Some Homemade guacamole
Plopped that inside a sprouted corn torilla. And to deal with the pesky breakage of corn tortillas we wrapped the whole thing up in a lettuce leaf.

I've been trying to get back on the wagon being stricter about my diet beacuse, well i feel good when I am! When I'm lazy like I have been for months, i feel like total crap. For multiple different health reasons I need to avoid carbohydrates and sugars in general as much as possible. Which can be fairly easy for a veggie head like myself but for the times I would like to indulge in a little carb action Paleo based baking makes me feel better about it.http://www.blogger.com/img/blank.gif
Last night I attempted this Paleo flax bread recipe. For the first round, to make it a little more snacky, i decided to make mini loaves.

They turned out perfectly. They taste good. Because Adeleine helped me make it she decided it must be some sort of tasty treat for everyone and started calling it cookie bread. Both kids ate a bunch of it, little did they know it was healthy flax bread.
Next time I think I would double the recipe. The recipe if you like Paleo Flax Bread
